I had a similar problem last year while tuning. My car ran great, but when you got on it, it would run like crap. My problem was the MAF wires near the ECU were plugged into each other but not very well. When the turbo would start to spool the wires would move apart a little and cause the car to run like shit because it was getting the wrong info from the maf. Maybe just check those wires to eliminate that problem.
